Tofu & Rice Salad Provençale

This is a vegan version of the salad I use to eat alot while in France. Instead of tuna, there is tofu. No eggs.

400 g Cooked rice
300 g Tofu, schredded
200 g Vegan Mayonnaise
2 Tomatoes, sliced
1 Big red onion, sliced
1 Lemon, juice
Olives, chopped parsley, salt, black pepper

Mix the ingridients in a salad bowl. Refrigirate for a few hours. Have a glass of wine, think of  the Mediterranean.
